I put together this set after reading through an eighteenth century account of Mary Anne Hanway’s travels through Scotland. You can find the book on Archive.org:

The passage about Roslin Castle begins on page 68. She mentions specifically that they enjoyed a dish of eels for a meal at Roslin castle, and “Pay the Reckoning” is also known as “Bobbing for Eels.” She also has a fun passage about Bagpipers at dinner, beginning on page 132:
“they love dancing to excess, and are the best country-dancers I ever saw, and keep it up (as the phrase is) for hours together, with a life, vivactiy and spirit, of which you can have no conception. In many houses, they still retain the ancient custom of the pipers playing all the time the company are at dinner, on his horrid bagpipes; this is to me more dreadful, than the grunting of pigs, the screaming of owls, and the squalling of cats. All these creatures in a concert would be to my ears pleasing, compared to that discordant instrument to which I have a natural antipathy.” (132-133)

I found and fell in love with “The Berlin Waltz” while looking through Hamilton’s Universal Tune Book and feel like it sets a good mood for going into “Fitzmaurice’s Trip to Roslin Castle” and “Pay the Reckoning.” Richard Fitzmaurice was an Irish piper who lived in Scotland and published these several volumes of tunes. I’m using O’Farrell’s setting for “Pay the Reckoning;” O’Farrell and Fitzmaurice were publishing at the same time and touring around offering performances. “Pay the Reckoning” has several other names, including “Bobbing for Eels” as mentioned, but it is also attributed to Gentleman Irish Piper Walker Jackson with the title “Jackson’s Jug of Punch” and “Jackson’s Bottle of Brandy.”
